McCain Wedges Summer of Sharing Recipe #1 : Greek Lamb & Feta Burgers topped with Red Onion, Cucumber & Olives, served with Oregano Wedges



As I told you yesterday, we received an amazing Tesco delivery at The Madhouse this weekend, containing all the ingredients, including several bags of McCain wedges, that we'd need to try out their Summer of Sharing recipes. Getting in the spirit of the Olympic Games, each recipe is inspired by a different country. Well, first stop Greece :


Greek Lamb & Feta Burgers topped with Red Onion, Cucumber & Olives, served with Oregano Wedges


For the oregano wedges:
300g McCain Sea Salt & Cracked Black
Pepper Wedges
¼ tsp dried oregano

For the burger:
500g lean lamb mince
1 garlic clove, peeled and finely chopped
¼ tsp ground paprika
1 tsp ground allspice
¼ tsp cumin powder
3-4 tbsp flat-leaf parsley, freshly chopped
Grated zest of 1 lemon
100g Feta cheese, roughly crumbled
Salt and freshly milled black pepper

For the topping:
¼ cucumber, peeled and sliced
1 small red onion, peeled and finely chopped
6 olives, sliced

To serve:
4 crusty bread rolls, halved

Method :


• Place all the burger ingredients in a large bowl and mix well. It is  easier to do this using clean hands so you get all the ingredients blended well.


• Shape the mixture into 4 burgers and if you have time, chill for 20 - 30  minutes. (I didn't chill mine and it worked fine.)


• Either cook the burgers under a preheated grill or on a hot barbecue  for 6-8 minutes on each side until cooked through. (I did mine in a frying pan because the grill was already being used for the wedges. I also decided to fry the red onion because nobody fancied raw onion breath !!)


• Place the McCain Sea Salt & Cracked Black Pepper Wedges on a  baking sheet. Sprinkle with the dried oregano and cook as per pack  instructions.


• Serve the burgers on lightly toasted bread rolls and top with the cucumber, red onion and olives alongside a mound of oregano wedges.


Verdict - yummy ! The younger Madhouse Mini-testers found that the peppery taste of the  McCain Sea Salt & Cracked Black Pepper Wedges were a bit "spicy" for them, but dipping them in ketchup got around this, and everyone else loved them. Last week, you may remember I made some Beefburgers Stuffed With Goat's Cheese and Pear for the Capricorn Blogger Challenge and I said that they were inspired by the homemade burgers I'd tasted in Greece years ago. Well, these burgers have exactly the taste I remember and I will definitely be making them again as they're a real trip down memory lane. As I'm watching the calories, I had mine without the bread roll and with all the toppings on the side, next to the wedges, and that was lovely too.

Can't wait to try out the next recipe - I haven't decided which one it will be yet !
