Ainsley BBQ Challenge Recipe #2 - Beef & Red Pepper Skewers with Roasted Vegetable Cous Cous

After trying out the recipe for Fragrant Beef Koftas with Raita earlier in the week, today I was insprired by Ainsley's second barbecue recipe for Beef & Red Pepper Skewers with Roasted Vegetable Cous Cous. It's really quick and simple to make and tastes lovely.




INGREDIENTS

1 x 100g sachet of Ainsley Harriott Roasted Vegetable Cous Cous

15ml (1 tbsp) olive oil

1 tsp paprika

1 large garlic clove, crushed

225g (8oz) sirloin steak, trimmed and cut into cubes

1 small red pepper, cored and cut into cubes

salt and freshly ground black pepper

STEP 1

For extra flavour it is recommended to marinade the dish for a minimum of 20 minutes to 24 hours

STEP 2

Place the olive oil in a shallow dish with the paprika and garlic. Season to taste and mix well. Add the beef cubes and toss until well combined, then cover with cling film and chill for at least 20 minutes or up to 24 hours.

STEP 3

Soak 4 bamboo skewers in cold water for at least 15 minutes.

STEP 4

Meanwhile, make the Ainsley Harriott Roasted Vegetable Cous Cous according to the directions on the sachet.

STEP 5

To cook the beef: Pat dry the bamboo skewers and then thread on the marinated beef with the red pepper cubes. Grill for 8-10 minutes until cooked through and lightly charred, turning occasionally.

STEP 6

Divide the Ainsley Harriott Roasted Vegetable Cous Cous between plates and arrange the beef and red pepper skewers to the side.

STEP 7

Other Ideas: Use turkey fillet instead of beef for a lower fat alternative.

We've had great fun trying out the ingredients from the Ainsley barbecue challenge hamper that we received. We loved both recipes and I'll definitely be using the cous cous as a barbecue accompaniment again because it is so quick and simple to prepare, unlike the homemade coleslaw and potato salad that I usually make.

    1. You should try it, it really is simple. Ditch the skewers and just throw all the ingredients in a frying pan, it will be just as good (just minus the smokiness of the bbq). The cous cous is instant - just add boiling water and wait 5 minutes :)

  3. Looks fab, I love cous cous but my family think its too bland, maybe this is the way forward for us. :-)

    1. Definitely - or just add herbs and spices to regular couscous. Adding a stock cube to the water jazzes it up a bit too, and a big knob of butter melting on top helps too (or a drizzle of olive oil, if you're being healthy !)
