Bake It Yourself : BLONDE CHRISTMAS PUDDING AND TIPSY ORANGE SAUCE RECIPE

Whilst all recipes have been developed for use in conjunction with a Neff oven, it is possible to achieve successful results when using different oven brands. Simply follow the recipes and refer to your appliance user manual, as some manufacturers may suggest using higher temperature settings.

I love the look of this twist on classic Christmas pudding.

BLONDE CHRISTMAS PUDDING
AND TIPSY ORANGE SAUCE RECIPE




The Christmas pudding is an essential part of Christmas day, but it can often be a little too filling after a rich and indulgent meal. For this reason Neff have created the Blonde Christmas pudding as an alternative to the traditional recipe, offering a lighter texture while yet maintaining those classic Christmas ingredients such as mixed spice and sultanas.

Neff has also created a fresh sauce as an alternative to to traditional and often heavy pudding accompaniments such as brandy butter, custard and cream. This Tipsy Orange Sauce has a light, refreshing taste enhanced by the addition of Beaumes de Venise, which adds some festive cheer to this luxurious recipe.

Preparation time: 30 minutes

Neff Steam Oven: Blonde Christmas Pudding – 100C for 3-3 hours 30 minutes.

This recipe has been specially developed for Neff ovens, however it is possible to achieve successful results when using different oven brands. If you do not have a steam oven, use the traditional method of steaming the pudding on your hob but be careful not to boil dry – timings will remain the same.

Serves: Blonde Christmas Pudding – 8-10 pieces / Tipsy Orange Sauce – 4 servings

Ingredients:

Blonde Christmas Pudding :

110g chopped apricots
55g sultanas
100g blueberries
6 tbsps Muscat de Beaumes de Venise wine
1 tsp mixed spice
170g plain flour
55g breadcrumbs
110g caster sugar
110g melted butter
2 eggs

Tipsy Orange Sauce:

2 tbsp cornflour
55g caster sugar
150ml fresh orange juice
150ml water
Finely grated zest of 1 orange
3 tbsp Beaumes de Venise white wine (optional)
Zest and juice of one lemon

Blonde Christmas Pudding method:

1. Soak the fruit overnight in wine and mixed spice.

2. Lightly grease a 1 litre basin and line with clingfilm.

3. Add the dry ingredients to fruit and gently stir.

4. Then beat the eggs and melt the butter adding this to the mixture as well. Finally add lemon zest and enough lemon juice to bind.

5. Press the mixture into greased basin and cover with double thickness of greaseproof paper tied in place with string.

6. Then steam the mixture for three to three and a half hours. A hob steam may be slightly faster, but the
mixture should look cooked and golden.

7. The pudding will require further 40 minutes steaming prior to serving.

8. To finish off the pudding serve with Tipsy Orange sauce or a cinnamon flavoured cream.

Tipsy Orange Sauce method:

1. Put the cornflour and sugar into a basin and gradually stir in the orange juice until well mixed. Then stir in the water and orange zest.

2. Pour the mixture into a saucepan and bring to the boil, make sure you are stirring continuously until the sauce has thickened.

3. Remove the sauce from the heat and stir in the Beaumes de Venise.

Cooks tip:

Beaumes de Venise adds a touch of festive indulgence to this recipe but the orange sauce is delicious either with or without it. Also, this sauce is best served immediately.
