Campbell's Soup Capsule Cupboard cookery challenge

Winter has set in, and so has the need for soup and warming comfort food. Campbell’s Condensed Soup has partnered with renowned Michelin-starred chef Gary Rhodes to develop the Campbell’s Capsule Cupboard.

Rather like a woman’s capsule wardrobe, where a variety of outfits are created from a few classic items of clothing, the Campbell’s Capsule Cupboard enables dozens of recipes to be made using a tin of Campbell’s Condensed Soup and a variety of the 12 store-cupboard essentials listed below:

Pasta
Rice
Potatoes
Onions
Peppers
Kidney beans
Sweetcorn
Broccoli
Tuna
Chicken
Sausages
Cheese

I was sent some Campbell's Soup and challenged to come up with a recipe using just ingredients from the list above. I got my thinking cap on, looked at what was in the fridge and freezer and came up with ... Cheesy Spicy Sausage Surprise ! (There's a subtle nod to EastEnders there, that you might have picked up on !)

Here's what you need :

 Cheesy Spicy Sausage Surprise

1 packet of sausages
2 onions
1 can of Campbell's Cream of Tomato Soup
1 can of sweetcorn
1 can of kidney beans
1 bag of Lightly Spiced Wedges
spices to taste (oregano - Cayenne pepper - smoked paprika - cumin - chilli powder - garlic granules - spicy Italian seasoning - garlic Italian seasoning)
200g grated cheese

(As this is a totally made up recipe, feel free to play around with it to suit your tastes !)

Chop up and fry a packet of sausages and two onions until the sausages are cooked through and browned all over and the onions have gone soft and translucent. I used herby chipolatas because it was what we had in the freezer (leftover from barbecue season !) but any type of sausages would do.

I'm incapable of cooking without using spices so I jazzed things up using all of these - oregano - Cayenne pepper - smoked paprika - cumin - chilli powder - garlic granules - spicy Italian seasoning - garlic Italian seasoning. Luckily spices were allowed as added extra ingredients for the challenge !

Time to add a trio of tins - kidney beans, sweetcorn and the cream of tomato soup.

Have a good stir, bring it almost to the boil, reduce the heat and add 200g of grated cheese. Stir until the cheese has totally melted and gone stringy and all the ingredients are perfectly combined.

Serve over lightly spiced wedges. This would also work well with rice or pasta, which are also in the Capsule Cupboard list.

I'll admit it's not a pretty dish but it does taste really lovely and is the perfect family meal for chilly winter evenings.

Disclosure : I was sent a couple of tins of Campbell's soup in order to take part in the challenge.

  1. I make something very similar, but add a cup of rice and a tin of baked beans, my mum used to call it cowboy's suprise. Really tasty easy dinner, really nice in a slow cooker too.

  2. I needed an idea of what to make this week :) great too as I can save portions of it for OH's lunch and to freeze. I use lots of spices too.

  3. It has been quite a limiting list of ingredents, to be honest. I was struggling a bit with it. Just finishing the post later today, we had a pasta bake (surprise, surprise, lol). I would be happy to eat your sausage casserole, though a reference to the Eastenders was lost on me, as I don't watch it. :)

  4. I made a pasta bake (not very adventurous, but I couldn't think of anything else). Like you, the photo didn't do it justice, but it tasted delicious.

    Good luck in the challenge!
