Midweek recipe : Quick Smoked Sausage and Bean Casserole



I often make a sausage and bean casserole in the slow cooker but decided to go for a quick-cook option on the hob yesterday, which was just as lovely.

Ingredients (for a family of 5):

8 sausages (we used smoked saucisses de Toulouse but anything would do)
2 onions
half a red pepper
half a yellow pepper
6 mushrooms
big handful of frozen peas
tin of baked beans
herbs of choice (I used oregano, Spicy Italian Perfect Shake and Smoked Paprika)
a tin of baked beans



Slice the sausages into large chunks and fry until cooked through. Add the onions and mushrooms and continue stir-frying for 5 minutes.


Add the red and yellow peppers and frozen peas and continue stir-frying for 5 minutes.


Season with the herbs and spices of your choice. You can make it spicy by adding chilli powder or keep it mild if you have kids eating it who don't like spicy food.


Add the can of beans and stir well to combine.It's a complete meal in itself, or you could serve it with rice, pasta or potatoes, if desired.

If you have any leftover cooked vegetables, this is a great way of using them up. Just throw them all in at the same time as the beans.

  4. I did something similar in the week. Oregano and Paprika are two of my most used herbs, all the family like them and with sausages and baked beans you know the kids will say yes without it being too basic for us parents!
