Madhouse Recipe : Fruity Coleslaw


This started off as regular homemade coleslaw - chop 1/2 white cabbage, 1 large carrot and 1 spring onion and toss together in a bowl. Add light mayonnaise, 1 tablespoonful at a time, until it is evenly covered (use the smallest amount possible).


As part of the veg box challenge, I wanted to make a few changes so I chopped up a red apple, squeezed over some lemon juice, and added it to the coleslaw with a generous handful of raisins.


This actually worked really well - the soft chewiness of the raisins nicely complemented the crunchiness of the vegetables.

  1. Sorry that I'm commenting again, but I can't believe you're posting this recipe, I've literally spent my whole morning looking at different coleslaw recipes! I want to make a asian flavoured one, but I'm slightly scared of raw cabbage, is there anything I need to pay attention to?

    2. raw cabbage... I've never eaten more than like a tablespoon...

    3. Take off the rough outer leaves and the hard core and just shred it fine. It may give some people indigestion, I guess, but can't be any worse than cucumber !
