I like to put fish on the menu at The Madhouse every now and then, but it always gets a lukewarm reception at best. Madhouse Daddy Mike says it's ok but he'd prefer meat and the kids aren't keen on the taste or the bones. I decided to try jazzing up some white fish - I used cod - with a sachet of Schwartz Grill Mates Mojito Lime Marinade Mix.
The pack suggests using it with chicken, beef or king prawns, but having had a look at the main flavours - sweet lime, mint and a hint of Cayenne pepper - I thought it sounded a bit like the flavours I use with salmon and decided to give it a go with fish. The instructions tell you to add the contents of the pack to 50ml oil, 50ml white rum and 2 tbsp white wine vinegar. I actually left out the rum and added a bit extra oil and a squeeze of lemon juice. This made quite a thick paste which I smeared all over the fish for half an hour before baking it in the oven.
The marinade gave the fish a really interesting flavour - slightly spicy, with zesty citrus notes coming through - that Madhouse Daddy Mike really liked, even if the kids still weren't keen.
There is a recipe twist on the pack, suggesting combining the pack contents with oil, lime juice and honey, which sounds like another great flavour combination for chicken or fish.
The complete ingredients list is : Salt, Sugar, Dried Garlic, Paprika, Green Bell Peppers, Modified Maize Starch, Dried Onion, Dried Orange Peel, Acidity Regulator (Citric Acid), Cumin, Natural Lime Flavouring, Black Pepper, Mint, Cayenne Pepper, Oregano, Parsley, Anti-caking Agent (Silicon Dioxide). The 30g pack contains 78 calories, 14.8g of carbs (of which 8g sugar), 0.6g of fat (of which 0.1g saturates), 3g of fibre and 3g of sodium.
