Slow-cooker recipe : Indonesian Chicken


I love my slow cooker but I always tend to end up making the same things - usually beef in beer stew, beef bourguignon and lamb or chicken casserole - so I decided to go and hunt out something a bit more exciting. A recipe for Indonesian Chicken caught my eye in Leanne Ely's Saving Dinner recipe book so I decided to give it a try. I wasn't at all sure about the mix of flavours - peanut butter and soy sauce together?! - but I was pleasantly surprised at how well it works. Sophie declared it the best chicken she has ever tasted, which is saying something !

Slow-Cooker Indonesian Chicken


Ingredients :

6 chicken thighs
1 tbsp soy sauce
2 cloves of garlic, crushed
2 tsp fresh ginger, crushed
1&1/2 tsp sesame oil
1/4 tsp Cayenne pepper
1/3 cup (a few tbsp) peanut butter

Method :



Put the chicken in the slow cooker. Combine the soy sauce, garlic, ginger, sesame oil and Cayenne pepper in a bowl and pour it over the chicken. Cover and cook on a low setting for 6-7 hours or until the chicken is tender and totally cooked.


Remove the chicken and stir the cooking juices, gently scraping off any bits of meat stuck on the sides or bottom of the slow cooker pot.


Stir in the peanut butter until smooth and spoon the sauce over the chicken to serve.

The serving suggestion was with brown rice, broccoli and baked sweet potatoes, but I served ours with rice and salad, drizzled with Spicy Chilli, Coriander and Ginger Dressing.

Each serving contains 139 calories, 10g of fat, 10g of protein, 3g of carbs, 1g of fibre and 16mg of cholesterol.

The main flavour that comes through in the sauce is peanut and I actually added an extra glug of soy sauce and generous sprinkle of Cayenne pepper to add a bit of oomph. Definitely one that we'll be having again, and I'm inspired to go and find more new slow-cooper recipes to try now ! Anyone got any new ones for us to try?
