Madhouse recipe : Creamy Pea & Ham Pasta

This recipe is inspired by the Tagliatelle with Cherry Tomatoes, Spinach and Peas recipe from Annabel Karmel's Quick & Easy Toddler Meals - you can read my review of the book here and enter my giveaway to win a copy here.

Creamy Pea & Ham Pasta



ingredients (serves 5) :

1/2 pack spaghetti
1 pack ham, chopped
2 cups of frozen peas
1/2 tub low fat crème fraîche
a handful of grated cheese
2 spring onions, chopped
a handful of cherry tomatoes, halved

As you can tell from the quantities, this is a real rough and ready throw-it-all-together-without-worrying-about-measuring dish ! 

Cook the spaghetti in a large pan of boiling salted water.

Meanwhile, put the frozen peas in a frying pan and add a ladleful of the spaghetti water to cook them, stirring, for a few minutes. Add the cream and cheese, stir to melt. Add the ham and spring onions and stir.

Drain and serve the spaghetti. Spoon over some of the sauce and sprinkle cherry tomato halves around the sides of the bowl.

It's a lovely colourful dish and the slightly firm peas give it a lovely texture, contrasting with the soft spaghetti and creamy sauce. Even the Madhouse Mini Testers polished it all off and asked for seconds.
