Madhouse Salad Recipe : Chicken Fajita Salad

If you think salads are boring, here's one that you're bound to love because you feel like you're eating fajitas, while avoiding all the high calorie toppings like cheese and soured cream.

Chicken Fajita Salad



ingredients : (for 2 servings)

a drizzle of olive oil
2 chicken fillets
1 onion
1/2 red pepper
1/2 green pepper
1/2 sachet fajitas seasoning
1 tomato
1/4 cucumber
handful of olives
1/2 lettuce
a drizzle of salad dressing (optional)

Method :

Chop the chicken, onion and peppers into bite-sized pieces. Gently fry in a drizzle of olive oil for 10 minutes. Add the fajitas seasoning, stir well to make sure everything is evenly coated and continue to cook for 5 minutes. Turn off the heat.

Roughly shred the lettuce with your hands and, if desired, toss in a little salad dressing. (But I find that the spicy chicken gives it enough flavour that you don't actually need it, if you're counting the calories.) 

Create a bed of lettuce on each plate. Scatter over slices of cucumber, chopped pieces of tomato and a handful of olives. 

Spoon the spicy chicken - hot or cold, however you fancy it - in the middle of the plate.
