Phil Vickery Seriously Good Gluten Free Chocolate Chunk Cookie Mix review


Following on from our review of the Vanilla & Raspberry Cupcake Mix from the same range, we've just been trying out the Phil Vickery Seriously Good Gluten Free Chocolate Chunk Cookie Mix from Squire's Kitchen.


Unlike the other pack, this box only contains one item - a big silver bag of cookie mix.


It looks a bit like lumpy cocoa powder and didn't seem to have many chocolate chunks when I peered in the top of the bag, but the proof of the pudding cookies would be in the eating !


You need to add 1 egg and 50ml of vegetable oil - Juliette did the honours again. She's getting really good at cracking eggs and measuring out ingredients all by herself now.


Add the cookie mix and give it a good stir.


It soon starts coming together into a dough.


At this point, the instructions tell you to knead it by hand then roll it into a sausage shape about 6cm in diameter and cut off discs to make the cookies.


Our dough was way too sticky and wet to mould it into a sausage shape though so we went for plan B.


The usual dollops of dough with a spoon worked just fine !


The box says that you can get 10 cookies but we managed 12.


The instructions tell you to bake them for 15 minutes until pale golden but still slightly soft. I always end up over-baking my cookies so they are crunchy but not chewy so I took them out bang on 15 minutes. They were still soft and didn't really firm up when they cooled, as I expected. They taste lovely and have a really light texture but do break apart when you lift them out of the tin, so I'd leave them for a couple more minutes next time.

The pack says that they are sensational warm from the oven and can be warmed in the microwave for a fresh-baked, soft-centre style cookie. They can also be frozen as soon as they've cooled. No chance whatsoever of that ever happening here at The Madhouse though. I looked in the tin earlier and there are only two left !

If I hadn't read the label and seen that they are gluten-free and dairy-free, I'd never have thought these were "free-from" cookies because they have a soft, light texture and taste lovely.
