Bisto Midweek Meal Challenge recipe #2 : Bangers with Red Onion Gravy & Root Veg Mash


I smiled when I saw this recipe card - bangers and mash is hardly rocket science, so I didn't think I'd need to follow the instructions. But then I noticed the twist. Mash made with not just potatoes but also carrots and swede. A sneaky way of getting the Madhouse Mini-testers to love swede (they usually don't like it but asked if they can have "special mash" again because it's so lovely !) and it also really reminds me of squishing my carrots and peas into my mash as a kid at my nan's house - I now wonder why I stopped because it tastes gorgeous !

Bangers with Red Onion Gravy & Root Veg Mash




Ingredients (4 servings)

4 heaped teaspoons Bisto Favourite Reduced Salt Gravy Granules
1 large red onion, thinly sliced
900g (2lb) potatoes, cut into chunks
500g (1lb 2oz) bag prepared carrots and swede
8 reduced fat sausages
Salt and freshly ground black pepper

Preparation

Sprinkle 4 teaspoons of the Bisto Favourites Reduced Salt Gravy Granules into a saucepan and add 450ml (3/4 pint) boiling water, stirring until thickened and smooth. Add the red onion, then cook over a very low heat for 15-20 minutes, stirring occasionally. Add extra water if the gravy reduces down too much.

Meanwhile, put the potatoes, carrots and swede into a large saucepan. Cover with boiling water and add a pinch of salt. Cover and simmer for 15-20 minutes, until tender.

Meanwhile, preheat the grill. Arrange the sausages on the grill rack and cook them for 12-15 minutes, turning often.


Drain and mash the vegetables. Season with black pepper, then re-heat for a few moments.

Serve with the sausages and red onion gravy. Yum!

Cooking tips : If you’re watching your salt intake , don’t add any salt to the cooking water, and use Bisto reduced salt favourite gravy granules.
