Bisto Midweek Meal Challenge recipe #4 : Marvellous Monday Pie


After the Sunday roast, we always end up with a Tupperware dish (or actually a recycled ice cream tub!) full of leftovers - usually cooked chicken, potatoes and vegetables. I invariably chop it all into bite-sized pieces then heat it all up in gravy for lunch the next day. This week though, I followed Bisto's recipe suggestion and made it into a lovely pie.

Here's the recipe from the recipe card :

Marvellous Monday Pie


serves 6, prep time 10 minutes, cooking time 40 minutes

ingredients :

5 heaped teaspoons Bisto Favourite Gravy Granules
300g cooked lamb or beef, cut into chunks
250g leftover sliced carrots
400g leftover boiled or roast potatoes, cut into chunks
200g mushrooms, sliced
1 tablespoon chopped fresh parsley
320g ready-rolled, reduced fat puff pastry sheet, thawed if frozen
1 small egg, beaten, or 2 tablespoons milk
salt and freshly ground black pepper

Method :

1. Preheat the oven to 220°C/ fan oven 200°C/gas mark 7.

2. Sprinkle the gravy granules into a large saucepan and stir in 350ml boiling water, stirring until thickened and smooth. Add the meat, vegetables and parsley. Simmer for 4-5 minutes.

3. Meanwhile, unroll the pastry. Cut out a lid for your pie using the up-turned dish as a template. Cut out strips of pastry to fit around the rim and use the trimmings to cut out pastry leaves (if you like).

4. Transfer the meat mixture to the pie dish. Dampen the edge of the dish with a little water and put the pastry strips around the edge. Brush these with the beaten egg or milk then place the pastry lid on top, pressing the edges together to seal. Arrange the pastry leaves on top if using and brush the top of the pie with egg or milk. Bake for 20-25 minutes until risen and golden brown.

5. Serve and enjoy, with some extra vegetables such as green beans, peas or broccoli.


For our version, I used leftover chicken instead of beef or lamb.


As we were a bit low on meat, I popped some sausages under the grill, chopped them up and added those to the pie too, which worked really well.


As it was a week night and I was in a rush, I used ready made puff pastry, making it into a really quick and simple meal. The kids helped with decorating the top of the pie with the offcuts !
