Madhouse Midweek recipe : Creamy Leek & Mushroom Chicken

This was such a simple dish to throw together and the whole family loved it. It's quite healthy and it's quick enough for when I get home from work and need something on the table quick.

Creamy Leek & Mushroom Chicken

ingredients :
1 chicken breast fillet per person
a little olive oil
salt, pepper, garlic granules
3 leeks
3 large mushrooms
20cl crème fraîche
a handful of grated cheese (optional)

Season and fry the chicken breast fillets in a little olive oil on both sides until cooked through and the juices run clear when stabbed. Put them on a plate to one side.


In the same pan, add a little extra olive oil if necessary and gently fry the leeks and mushrooms for 10 minutes, stirring, until soft.


Pour in the crème fraîche and heat through for a few minutes until it starts to bubble. Throw in a handful of grated cheese if desired and stir through until it melts.

Return the chicken fillets to the pan to warm them back up and when they are piping hot, serve with rice, spooning the creamy leeks and mushrooms over the top of the chicken.
