Madhouse recipe : Minty Lamb Fricassée #Christmascondiments


I decided to delve into my #Christmascondiments hamper to see what I could do with the leftover lamb from our Sunday roast last week. It ended up being a totally simple but delicious one pot wonder that only took fifteen minutes to get on the table, so it's perfect for a midweek meal when you're in a rush.

Minty Lamb Fricassée

ingredients :

leftover roast lamb
leftover cooked vegetables (or a mixture of frozen peas/carrots/sweetcorn)
3 tbsp mint sauce
gravy (I used the tube of Instant Beef Gravy from the hamper but you could replace with a stock cube, if you prefer)


Chop the lamb into bite sized pieces and add the veg. Add a little stock/gravy and cook, stirring, for 7 minutes if using frozen vegetables.


Add the mint sauce and mix thoroughly.


Add some gravy or stock and cook for a few minutes until it thickens.

This can be served on its own or with rice or mashed potatoes.
