Family faves recipe : Cheesy Fishfinger & Leek Pie


As I was sorting through my recipe folder at the weekend, I came across this tasty idea from Birds Eye which sounded like the perfect midweek meal. As well as being quick and simple, it only uses store cupboard basics and it's also a great way of sneaking some extra veg into the kids' tummies !

Cheesy Fishfinger & Leek Pie


ingredients :

6 Birds Eye fishfingers
15ml vegetable oil
2 leeks
8 baby carrots
1 courgette
2 large potatoes
75g cheddar cheese


Cook the fishfingers until golden brown.


In a frying pan, heat the oil until hot. Add the leeks and carrots and cook for about 5 minutes until tender then stir-fry with the courgettes and potato. Cook for a further 3-5 minutes or until the potato is cooked but not browned.


Season well. Cut each fish finger in half and toss carefully into the vegetable mixture then put it all in an ovenproof dish.


Sprinkle over the cheese. (I had lots of raclette cheese left over from Sunday so I used that instead.)


Cook in a preheated oven (190°C/gas mark 5) or pop it under the grill for about 5-10 minutes until the cheese has melted and gone golden brown.

Clean plates all round and a totally stress-free dinner at a minute's notice. What more could you ask for?!
