Madhouse recipe : Spicy Carrot Soup

You can't beat a bowl of warming soup on a cold evening and, if you're trying to watch your weight, it's even better news. This one is simple and only uses ingredients you're bound to have kicking around in the kitchen so it can be whizzed up in half an hour.


 Spicy Carrot Soup


Ingredients

1tbsp olive oil
1 onion, chopped
450g/1lb carrots, washed and sliced
2 potatoes, washed and cubed
1 clove garlic, crushed
1 ltr vegetable stock
salt, pepper (I used onion salt and garlic pepper for extra flavour)
2tbsp baharat spice mix (I used this as I had a jar of it in the spice rack but you can use anything you like, including : paprika, chilli powder, allspice, cumin, nutmeg, cassia bark, cloves, ras el hanout, etc)
20cl crème fraîche

Method

1. Heat the oil in a large pan and gently fry the onions, carrots, potatoes and garlic for a few minutes, until they are beginning to soften but not colour.

2. Add the stock and bring to the boil, cover and simmer for 20mins until the carrots and potatoes are well cooked.

3. Use a stick blender to create a smooth soup. Mix in the spices and crème fraîche. 

We like to serve ours sprinkled with a little grated cheese.
