Special K granola review

You may have noticed my giveaway a couple of weeks ago for the new Special K granola, but I've also been trying it out myself. We received a lovely pack of goodies, containing a rather fetching shopping bag, as well as a bag of each of the two varieties, Raisins & Red Apples and Cranberry, Pumpkin Seeds & Almonds.

Well, the products may target people, particularly women, who are watching their waistlines - it contains 30 per cent less fat than most other granolas - but I was amazed to see that even the kids loved it. It has a lovely mix of different tastes and textures which means that each spoonful tastes different. It is made with five grains - Oats, Barley, Wheat, Spelt, and Rye - and it's fortified with 6 B vitamins and iron. It's lovely with milk or yogurt as a healthy breakfast or mid-afternoon snack, if you get the munchies and don't want to reach for chocolate or biscuits !

But there was one final item in the goodie bag - a tea towel with a rather lovely-sounding recipe for Special K Granola Muffins. Well, we had to give those a try, didn't we ?!

If you fancy making them too and can't quite make out the recipe on the tea towel, you need : 100ml milk, 2 large eggs, 2tbsp vegetable oil, 2tbsp clear honey, 1tsp vanilla extract, 2 apples (cored and grated), 125g wholemeal plain flour, 125g plain flour, 75g Kellogg's Special K granola, 1&1/2 tsp baking powder, 1&1/2tsp bicarbonate of soda, 1tsp ground cinnamon, extra granola for sprinkling.

It's a very simple recipe where you can just throw it all in a bowl, mix it up, plop it in muffin tins and bake in the oven until brown on top and cooked through. The kids love eating these like scones, cut in half and slathered in butter, which admittedly rather defeats the whole object of them being a low-fat/low-calorie option !
