Flora Buttery Funspiration Guide recipe : Chocolate Brownie Cup Cakes



 Like most kids, the Madhouse Mini-testers love baking so I'm always on the lookout for simple recipes that we can make together. This recipe for Chocolate Brownie Cup Cakes is designed especially with kids in mind and comes from the Flora Buttery Funspiration Guide, which you can download on the Mumsnet site here (click on the "Fun activities for kids" block). Mumsnet asked us to have a look and try out a couple of the activities and we think it's great. It doesn't only have cooking activities in it - I'll be telling you more about it in a separate blogpost. These Chocolate Brownie Cup Cakes are very simple to make but taste utterly divine, with a lovely gooey texture. Definitely one that we'll be making again !


Chocolate Brownie Cup Cakes


ingredients :

85g (3 oz) Flora Buttery
225g (8 oz) plain chocolate (I used milk chocolate)
2 large eggs
200g soft muscovado sugar (I used 150g dark muscovado sugar and 50g caster sugar)
140g (4 oz) plain flour
1 teaspoon vanilla essence

1. Preheat oven to 190°C, 170°C fan, Gas mark 5.

2. Gently melt the chocolate and Flora Buttery in the microwave (or in a bowl over hot water).

3. Whisk eggs and sugar together in a large bowl with the vanilla until light and creamy. 

4. Fold in chocolate and flour and spoon the mixture into 12 paper cases or greased bun tins.

5. Bake for around 25-30 minutes until soft and springy to touch. Cool on a wire tray.


(The original recipe calls for white chocolate icing topped with coconut coloured with green food colouring and chocolate footballs but I think they're better "nude" !)

The cakes are wonderfully soft and gooey if you eat them when they are still warm. When left to go cold, the top sets into a fairly hard, slightly crunchy sugary top, which gives way to the gooey, chewy brownie beneath - utterly delicious and I can't believe how quick and simple they are to make !
