Cooking with the kids : Chewits Rocky Road recipe


Chewits recently got in touch with a fun-sounding recipe for Chewits Rocky Road that I knew the Madhouse Mini-testers would love trying out. The absolute beauty of this recipe is that it can be adapted to use up all the odds and ends that are cluttering up your baking cupboard !

CHEWITS® Rocky Road


Prep Time – 15 minutes, Cooking Time – 5 minutes, Chilling Time – 2 hours
Serves 12

INGREDIENTS
125g unsalted butter, softened, plus extra, to grease
150g plain chocolate chips
150g milk chocolate chips
3tbsp golden syrup
200g digestive biscuits
50g mini marshmallows
50g slivered almonds
1pkt Fruit salad flavour CHEWITS®, chopped into pieces
1tbsp icing sugar, to dust


This can be tweaked to use up whatever you have lurking in the cupboard - I replaced the biscuits with cereal and added a little bag of raw chocolate covered mulberries (that have been there for months !) and walnuts instead of almonds.

METHOD

1. Lightly grease a 20cm square brownie tin.


2. Melt the butter, chocolate and syrup in a heavy-bottomed pan. Remove from the heat. (Or, to make the recipe even more kid-friendly, melt it in the microwave, in 10 second bursts, stirring in between.)


3. Put the biscuits into a plastic food bag, seal it and use a rolling pin to crush the biscuits into a variety of shapes and sizes. (Or weigh out the same weight of that cereal that has been lingering in the cupboard that nobody is eating !)


4. Fold the biscuit pieces into the chocolate and, when completely combined, tip in the marshmallows, almonds and CHEWITS®. (Save some to sprinkle over the top at the end to make it look prettier.)


5. Transfer the mixture to the brownie tin and use a spoon to push it firmly into the tin.


6. Chill for at least two hours, then remove from the fridge and dust with icing sugar before cutting into pieces.

Don't forget to lick the spoon and the bowl clean while you're waiting for it to set in the fridge !
Because I used cereal instead of biscuits, this basically turned into an amazingly indulgent and impressive-looking cornflake cake - the kids were suitably wowed and can't stop eating it !
