Amoy Malaysian Laksa Easy Meal Kit review


After our big birthday adventure yesterday, the last thing I wanted to do when we got home was start cooking something complicated for dinner. I'd defrosted some chicken breast so I had a look through the cupboard for inspiration and this Amoy Easy Meal Kit for Malaysian Laksa leapt out at me. (Quite literally in fact, because it was at the front of the cupboard and fell out when I opened the door !) The front of the box says that you should add king prawns and vegetables, but on the back, it also says that it works well with chicken.


Inside the box, you get four components : dry rice noodles, laksa paste, coconut milk and a little sachet of garlic and sweet red pepper seasoning.


According to the cooking instructions, you should add 180-200g king prawns or chicken, 100g green beans, 1 large red pepper and 1tbsp vegetable oil. This should serve two and promises a "mild" spice rating. I upped the quantities of chicken and vegetables and managed to get a meal for 5 out of it, although I did add an extra shake of Thai 7 Spice, because I'd stretched the paste and seasoning slightly too far.


After stir-frying the chicken and some onions (I can't help myself, I add onions to everything !), along with a bag of Chinese-style vegetables that was in the freezer, I mixed in the laksa paste. In another pot, I put the noodles on to cook for 8 minutes, before putting them in cold water to stop the cooking process.


The garlic and sweet red pepper seasoning looked lethal but appearance can be deceptive - it isn't chilli, it's sweet red pepper, so it's not hot at all.


Add the coconut milk and the seasoning and heat.


Toss in the cooked noodles and you have a complete meal that the whole family will enjoy because it's beautifully flavoured but not spicy.

I'd never even heard of Malaysian Laksa but now that we've tried it, it's definitely something that we'll be eating again, partly for the taste and partly because it's such a simple and quick meal to throw together when you're in a rush.
