Madhouse recipe : Fruity summer rolls


You may have noticed that I've been using up lots of odds and ends that have been lurking at the back of the cupboard in my recipes lately. Today's mission was finishing off some spring roll rice paper discs. We've already made Saigon Summer Rolls, Crab Spring Rolls and Pork & Veg Spring Rolls,  but this time I decided to try a sweet version and I was amazed at how quickly the kids wolfed them down !

Fruity summer rolls


ingredients :

chopped fruit of your choice (peach, pineapple, banana, apple, strawberries, or any combination of your choice)
rice paper discs (for making spring rolls)



As it's the end of the week, the fruit bowl is looking a bit empty so I used what we had - a nectarine, apple and banana - and supplemented it with some tinned pineapple and this pack of Urban Fruit dried strawberries, from a recent Degustabox, which are delciously sweet and chewy.


Dip the rice paper disc in warm water until it goes soft and sticky then lay out on a flat surface. Spoon some of the fruit in a line in the middle, then fold over both ends and roll up. It's surprisingly simple.


Place in the fridge to chill and eat as they are as summer rolls or, if you prefer, gently fry them in some oil to make hot spring rolls. These would work well with a sweet mango chilli dip or even in melted chocolate !
