Madhouse recipe : Sausagemeat pasties & meatballs

These pasties are so quick and simple to make - they only need 4 ingredients but they taste divine. It's perfect picnic food cold or can be served hot with salad or mash. I used up the leftover stuffing to make the next day's meal too making them a great value meal.

 Sausagemeat pasties

ingredients :

1 sheet ready-made puff pastry
1 pack sausagemeat
1 onion
1 pack stuffing

Make up the stuffing - I opted for cranberry & apple stuffing to give it extra flavour. I used the microwave method for simplicity as it will be going in the oven afterwards anyway. Leave to cool slightly so you won't burn your fingers.

Mix in the sausagemeat and a finely chopped onion.

Cut the puff pastry into 2 large or 4 smaller pieces. Top one half of each piece with the sausagemeat filling then fold over the over half and crimp the edges to seal. You can brush the top with egg wash or milk if you like, or I sprayed with Lurpak Cooking Mist. Put them in the oven for 30-40 minutes at 180° until the sausagemeat is cooked through and the pastry is golden brown.

Use any leftover filling to make meatballs. Mix in a beaten egg to help hold it together and squish into ball shapes with your hands, then fry on each side for 4-5 minutes until cooked right through.

These can be eaten cold as nibbles or hot with spaghetti and tomato sauce.

Enjoy !
