One of the things I loved about the Ephesia Holiday Beach hotel that we were staying in in Kusadasi is that, despite appealing to the masses with the traditional, bland, international food options like chips, nuggets and spaghetti, they also had lots of traditional Turkish options on offer if you looked for them. One of these was Gözleme, a sort of pancake with savoury fillings, that were made by hand in front of us.
I had to look up a recipe online for the pancake base, which looks more like bread dough than the usual runny pancake batter we use, and needs rolling out with a very thin stick.
Gözleme
ingredients :
400g flour
1tsp dried yeast
1tsp salt
1tsp sugar
250ml warm milk (or you could use Greek yogurt and reduce the quantity)
melted butter
filling :
Turkish white cheese (you could use halloumi or feta for an authentic taste, or substitute cheddar)
fresh, chopped spinach
cooked potato
Combine the ingredients to make a sticky dough. Knead and leave to rise for an hour. Pull off a small orange-sized piece and roll out until very thin (traditionally using a thin stick).
Cover one half with spinach.
Top with cheese and cooked potato.
Fold over and crimp the edges to seal.
Cook on one side, brushing with melted butter, then fold over the two edges to the middle and the bottom edge up to make a square shape and flip over to cook the other side.
Serve hot, cut into strips.
