Madhouse recipe : Boxing Day Cheesy Leftovers Omelette


So you can't face another turkey sandwich, turkey pie or turkey curry? How about slinging all those last bits into a cheesy omelette ?!

Boxing Day Cheesy Leftovers Omelette


ingredients :

leftover cooked turkey
2 leeks
3 potatoes (leftover roast potatoes can be used up here too)
3 mushrooms
1 onion
200g grated cheese
4 eggs
scant 1 pint of milk
salt/pepper

Peel, chop and fry the onions, leeks and mushrooms.Raw potato can be finely diced and added here - if they're precooked, they can be cut more roughly and added with the turkey.

Once the veggies are soft and cooked through, add the chopped turkey and potatoes.

Break the eggs in a pint glass, beat and top up to the top of the glass with milk.

Sprinkle cheese over the veggies and turkey, then pour over the eggy mixture.

Push the liquid from the sides to the centre until it starts to set then either put under the grill to finish cooking or, if you're feeling brave, place a plate upside down to cover the omelette, flip the whole thing over then slide it back in the pan up the other way.

This can be eaten hot or left to go cold and cut into chunks to eat alongside the turkey sandwiches !
