Madhouse recipe : Festive Flapjacks

If you are looking for a simple baking project to make with the kids in the run up to Christmas that also has the added bonus of giving you a lower fat and lower calorie alternative to mince pies, I have just the thing : Festive Flapjacks ! It also ticks the box if you need a dairy-free treat because we used Trex instead of butter.


Festive Flapjacks


ingredients

250g porridge oats
75g Trex
3 tbsp honey or golden syrup
1tbsp cinnamon
1/2 jar mincemeat
optional : white chocolate and silver balls


Melt the Trex in a microwave or in a saucepan over a low heat. Stir in the mincemeat and honey/golden syrup.


Mix the cinnamon into the oats. Pour the mincemeat mixture into the oats and stir to combine.


Press into a greased baking tin and cook for 20 minutes in the oven at 180° until they've gone nice and golden.


If you want a more indulgent treat, drizzle with melted white chocolate and top with silver balls. (Aim for the chocolate so that they stick !) Put in the fridge to firm up before cuttig into slices.

  4. ooohhh have never thought to try trex. always thought of i for frying chips in from my younger days, need to give this a go.
