Madhouse recipe : Leftover-friendly mild fruity curry


Sorry, that's not a very appetising-sounding name but that's exactly what it is ! I had some leftover chicken from yesterday's roast dinner, plus some roasted carrots and a couple of roast potatoes, so I had a look in the cupboards and came up with this dish. It's a a quick and simple but very tasty one-pot wonder using store cupboard staples that could be spiced up with the addition of chilli powder if you like it hot.

Leftover-friendly mild fruity curry


ingredients :

leftover roast chicken, carrots and potato (or whatever you have)
1 large onion
1 clove garlic
1 sachet microwavable basmati rice
1 tsp each of : cumin, ground coriander, garam massala, garlic granules, onion salt, Worcester sauce
5 tbsp crème fraîche
1 banana
2 handfuls dried tropical fruit mix (or raisins if that's all you have in the cupboard)

Chop and fry the onions and garlic in a drizzle of olive oil. Add the chopped leftover chicken and vegetables.

Add the spices and the crème fraîche and stir to combine.

Zap the rice in the microwave and add to the pot. Stir to combine.

Just before serving, chop the fresh banana and add to the pot, then toss in the dried fruit. Gently stir to mix things up.

Taste and add extra salt/spices/chilli powder if desired and extra crème fraîche if it's too dry.
