Globe-cooking recipe : Mote Con Huesillos (Chile)


I'd never heard of Mote Con Huesillos (which means wheat with dried peaches) but it is the Chilean summertime drink par excellence. Wikipedia have a whole article about it and explain that is sold all over the place by street vendors in Chile and it is also made at home. It's part drink part dessert because there is as much to eat as to drink ! It's a strange mixture but is actually very refreshing and quite pleasant. It does contain a scary amount of sugar though !


The only product needed from the Chilean-themed Kitchen Trotter box was a bag of dried peaches, which shouldn't be too hard to find in health stores.

Mote Con Huesillos

ingredients : (for 6 servings)

6 huesillos (dried peaches)
1.5 litres of water
2 cinnamon sticks
150g brown sugar + 10cl water
250g mote (wheat)


First, bring 1.5l of water to the boil, drop in the dried peaches and the cinnamon sticks, put on a lid, turn off the heat and leave to infuse overnight.


The next day, remove the peaches and cinnamon but keep the infusion. Bring it back to the boil.


At the same time, put the brown sugar and the 10cl of water in a separate pan and bring to the boil, stirring to dissolve the sugar and create a runny caramel. 



Put the peaches in it, along with the cinnamon (you can add a couple of pieces of orange zest if you like too) and caramelise the peaches for a few minutes.


Pour the caramel and peaches into the infusion and gently stir to combine them, without damaging the peaches. Turn off the heat.


Cook the wheat - I used a sachet of Ebly microwavable rice for convenience - and put a few spoonfuls in the bottom of each glass. Put a peach in each glass then top up with the liquid.


Leave to cool then put in the fridge to chill before eating/drinking. Make sure you serve each glass with a spoon !
