Globe-cooking recipe : Chicken Breast with Pine Nuts & Parmesan (Italy)



For a proper taste of Italy, this should have been served with pasta or risotto, but as it was a quick meal after a long day at work, a sachet of microwaveable rice had to do ! The great things is, it's a chuck-it-in-the-oven-and-let-it-get-on-with-it dish which is perfect for the midweek mayhem !

Chicken Breast with Pine Nuts & Parmesan


ingredients (serves 2):

2 chicken breast fillets
salt, pepper
handful of pine nuts
shavings of fresh parmesan cheese
a large knob of garlic butter
2 finely chopped sundried tomatoes

Lay the chicken breasts in an ovenproof dish and season with salt and pepper.

Sprinkle over the sundried tomatoes and pine nuts, then shave parmesan over the top.

Pop a knob of garlic butter on top of each chicken breast and bake in the oven at 180° for about half an hour.

The garlic butter keeps it all lovely and moist and the pine nuts give it some nice crunch.
