#KitchenClearout recipe : Sticky Chinese Pork


Last night was the first parent-teacher evening of the week (there's another one tomorrow night ... roll on, the holidays !) so by the time I got home at 9pm, there was no way I wanted to cook. Luckily I'd planned ahead and had this sweet, sticky, melt-in-the-mouth pork ready and waiting in the oven, along with some baked potatoes. It needed just three ingredients, used up the leftovers and was so simple the kids/husband could make it.


Thanks to the funky Prestige casserole dish that I'd received to review, it could also be made in advance because the dish can go straight from the freezer to the oven. It's also pretty enough to go straight to the dinner table - that's my kind of mult-tasking, time-saving dish !


So, on to the meal. Rummaging through the cupboard, I came across this sachet of Amoy Sticky Glaze Chinese Barbecue marinade. I also had some leftover roast pork. It wasn't the best pork we'd ever eaten - it was quite fatty and tough so I decided it needed some slow cooking to help it out.


I chopped up the pork along with a couple of onions and put them straight into the casserole dish.


Then poured over the marinade - Pierre wasn't too convinced by the colour and the stickiness !


I mixed it all up and left it to marinade for a couple of hours (at least) in the fridge.


Then put in the oven for a couple of hours at 180°, giving it a stir every now and then.


The fat melted and the meat ended up with the consistency of pulled pork. It totally hit the spot after a long day at work and a cold walk home from the bus stop !
