Madhouse recipe : Cheesy Bacon & Leek Puff- Pastry Wrap


Last week, in my on-going bid to clear out some of the fridge clutter, I came up with a recipe for black olive, tomato and anchovy puff pastry parcels. With black olives and anchovies, they were never going to be a hit with the kids, but, being a nice mummy, I made them a kid-friendly version with cheese, leeks and bacon. Unsurprisingly, they went down very well !

 Cheesy Bacon & Leek Puff- Pastry Wrap


ingredients :

1 sheet of ready-made puff pastry
1 large leek
200g bacon lardons
1 cup grated cheese
a little milk (optional)


Fry the bacon for 2-3 minutes to release some fat. Throw in the sliced leek and fry for 5-10 minutes until the leeks are soft and the bacon is going crispy. Drain off the excess fat.


Roll out the puff pastry sheet. Empty the leeks and bacon down the centre strip. Sprinkle a good handful of grated cheese over the top.


Fold both edges over to the middle and score with a knife to make it look pretty. Brish with a little milk if you want it to go a nice golden brown colour.


Put in the oven at 180° for 20 minutes until the pastry is cooked through and golden brown. Serve with salad or boiled potatoes/mash and veggies.
