Madhouse recipe : 10-Minute Creamy Prawn & Mushroom Pasta


Bored of the usual spaghetti bolognese or carbonara? How about this equally simple but tasty creamy prawn & mushroom pasta. It also works really well with added leeks and only takes minutes to get on the table.

10-Minute Creamy Prawn & Mushroom Pasta


ingredients :

spaghetti
6-8 king prawns per person
4 mushrooms
1 clove garlic
a knob of butter
20cl light crème fraîche
smoked paprika

Put the spaghetti on to cook in boiling, lightly salted water.


Heat the butter in a small frying pan and add the garlic, then the mushrooms. Cook for 2-3 minutes, stirring regularly.


Add the king prawns and cook for 2-3 minutes extra (or a little longer if using raw prawns - mine were already precooked. Make sure they're nice and pink.)


Pour in the crème fraîche and the paprika. Bring to a gentle simmer and cook for a couple of minutes for the sauce to reduce slightly. Drain off the pasta, serve on a plate and spoon the prawns, mushrooms and lashings of the creamy sauce on top. You can up the game by sprinkling grilled onions, parmesan or black onion seeds over the top.
