Madhouse recipe : Mediterranean baked fish


If you've seen this week's menu plan, you'll know that it's all about using up some of the sachets in my packet mix seasonings tin.



The starting point for this dish was a pack of Schwartz Grill Mates Mojito Lime Marinade Mix. According to the instructions, you should add it to a mix of oil, vinegar and white rum, but I just sprinkled it in the dish.

Mediterranean baked fish


ingredients :

fillets of white fish
2 courgettes
2 tomatoes
2 onions
1/2 red pepper
1/2 green pepper
a drizzle of lemon-infused olive oil
a pack of Schwartz Grill Mates Mojito Lime Marinade Mix


Roughly chop the vegetables. Put in a roasting tin with the fish fillets.


Drizzle with olive oil, sprinkle over the seasoning mix and toss it all about so that it is evenly coated.

Put in the oven at 200° for 30-40 minutes (less if you preheat it)  until the fish is cooked through. Serve with rice.


As well as using up a sachet from the seasoning mix tin, this cleared out all the veggies that were lurking in the bottom of the fridge, making it a prime contender for the #KitchenClearout linky.

  5. Baked fish with all the extra veggies sounds lovely. I'm sure I have one of those Grill Mates packs lurking in the kitchen cupboards too
