Madhouse recipe : Muesli Fridge Cake


Fridge cake is a great way of using up odds and ends of packets of cereal, biscuits, dried fruit, fairycake sprinkles, ... even stale cake that can be broken up into pieces and thrown in the bowl before coating it all in chocolate and putting it in the fridge to set. It's a great activity for the kids as there is no cooking involved - you can even use the microwave for melting the chocolate. I decided to make a slightly healthier version (let's be serious, it's still full of chocolate though !) by using up some muesli and it was just as lovely as usual.

 Muesli Fridge Cake


Roughly 2 bars of chocolate (whatever you like - I had 2 bars of white chocolate and a small bar of raw plain chocolate)
a large knob of butter
a good squeeze of golden syrup
2 cups of muesli
a good handful of dried cranberries
a good handful of coconut chips
a handful of partly crushed cereal for extra crunch (we used Shreddies and Cinni Minis)
a few slightly stale biscuits that had been forgotten in the tin


Put the chocolate, butter and golden syrup in a bowl and heat until melted, either in the microwave or a bain marie.


Toss in the museli.


Add the dried fruit.


Throw in the semi-crushed biscuits and cereal.


Scoop into a clingfilm-lined baking tray, fold the clingfilm over the top and press down so it all becomes one compact lump. Put in the fridge to set for at least a couple of hours.


Cut into squares.


Don't throw away the crumbly bits left in the tin. They can be used as a crumble-style topping for tarts and cupcakes, sprinkled over ice cream or custard or even eaten directly from the tin with a spoon, which is what the Madhouse Kids did !


This used up the end of a bag of muesli as well as some stale biscuits and odds and ends of dried fruit, so I'm adding it to the #KitchenClearout linky.

    1. The #KitchenClearout linky/recipes are my little contribution to reducing food waste and, above all, preventing me from getting brained by falling boxes/tins every time I open the kitchen cupboards !! lol
