Globecooking recipe : Crostata (Italian Jam Tart)


Believe it or not, this recipe came from watching Spongebob Squarepants. At the end of the usual cartoon, there was a "Cooking with Spongebob" segment and he made Fig Crostata. Obviously, Pierre wanted to try it so I googled for a recipe. There are all different types of crostata using any fruit or jam you like really, so I used a jar of Mamie's homemade blackberry jam. There are also different ways of presenting it - a lattice top, which I thought would be too similar to the Austrian Linzertorte I made a couple of weeks ago, and the more rustic version we went for.

Crostata


ingredients :

225g plain flour
1tsp baking powder
100g sugar
2 eggs 
125g butter (at room temperature)
1/2 jar of jam
handful of flaked almonds


Put the dry ingredients (flour, baking powder, sugar) into a bowl.


Add the butter and the eggs and start mixing with a fork, smashing the butter into small pieces.


When it starts coming together into a ball, swap to your hands and knead until it creates a nice ball of dough. Roll out on a floured surface.


Use to line a greased pie dish with a large overlap.


Fill with a generous layer of jam. It looks just like a humungous jam tart at this point !


Sprinkle with flaked amonds.


Roughly fold the overlap into the centre and crimp the edges together.


Bake at 180° for half an hour until the pastry is golden brown.

It's very and quick and simple to make. The pastry is nice and crumbly but quite dense so you'll only need a small slice !
