Madhouse recipe : Warm Spicy Lime Prawn Salad


This dish is my new absolute favourite way of eating prawns. It is as tasty as it is healthy so it's win-win ! It's also extremely versatile because you can eat it cold with shredded lettuce or tortilla chips, as a topping for bagels or a filling for wraps or even warm with rice.

Warm Spicy Lime Prawn Salad


ingredients :

for the marinade :
a generous slosh of lemon-infused olive oil (or just use regular olive oil and add a squirt of lemon juice)
1/2 tsp chilli paste
2 cloves of garlic, minced
1 small onion
1tbsp brown sugar
2tsp smoked paprika
1tsp garlic granules
2tsp Mexican oregano (or just regular oregano will do)
a shake of salt and black pepper

500g cooked, peeled prawns
3 tomatoes
1/4 of a cucmber
1/2 red pepper
squirt of lime juice
a handful of fresh parsley, chopped


Put all of the marinade ingredients into a bowl and stir to combine.


Chop the prawns into thirds and add to the marinade. Give it all a good stir and set aside while you prep the rest of the ingredients.


Finely dice the tomatoes, red pepper and cucumber. Season with salt and pepper and add a big squirt of lime juice. Give it all a good stir.


Pour the prawns plus all the marinade into a small frying pan and heat through for a few minutes until the onions/garlic are slightly cooked but not at all browned and the prawns are warmed through.


Pour the prawns mixture into the salad bowl and mix it all together. Use a pair of scissors to cut the fresh parsley over the top and give it a final stir. Taste and adjust seasoning just before serving (add extra salt, pepper, lime juice or chilli powder, if required).

Hmmm just looking at the pictures makes me want to eat this all over again ! I'm wondering if the same ingredients would be just as tasty with chicken or tuna - I think I may have to investigate.
