What's Cooking at The Madhouse? menu plan 8/4

Week two of the holidays and I've been having fun working through some of my bookmarked recipes. I basically worked out last week's and this week's menu plans at the same time so they are interchangeable - some have been swapped over from week 1 to week 2, in which case you might have already seen the recipes on my blog this week !

Saturday

lunch - Spanish omelette or a trip to McDonald's soft play

dinner - homemade soup but I have no idea what yet

Sunday

lunch - roast dinner with all the trimmings

dinner - "bits and crisps" as the kids call our version of smorging ! (cucumber, cherry tomatoes, carrot sticks, apple slices, cheese, cured meats, olives, crackers, crisps, ...) & leftover soup for us

Monday

lunch - bacon & cabbage with the leftover meat & potatoes from the roast

dinner - salmon wellington

Tuesday

lunch - cheeseburger pie (more a cheesy minced beef pie but that's the name of the Betty Crocker recipe !) with pico de gallo and possibly rice or wedges (not sure how it's going to come out - maybe salad would work better?)

dinner - chicken yakisoba (Japanese noodles) with stir fried veggies

Wednesday

lunch - chicken tacos (I have a kit - I think they're called tinga tacos)

dinner - Brunswick stew

Thursday

lunch - there's probably a fridge full of leftovers, if not spaghetti carbonara

dinner - Sicilian salad with mackerel

Friday

lunch - Huevos Rancheros

dinner - Grilled Prawn Ceviche (basically a posh prawn salad !)
