#LylesSummerSmiles recipe : Black Treacle-Glazed Courgette Bruschetta


Summer is in the air and this can only mean one thing – BBQ season ! To celebrate, Lyle’s have launched their limited edition Sticky Summer BBQ Black Treacle tin, available exclusively until July 2016. They also invited us to take part in a cookery challenge using black treacle as an ingredient in some tasty summer BBQ recipes. They gave us a few ideas to get us started and the first one that I tried was these simple bruschetta, which make a perfect light lunch or supper. I replaced the roasted peppers with cherry tomatoes which worked really well.

Black Treacle-Glazed Courgette Bruschetta


ingredients :

1tbsp Lyle's black treacle
3tbsp olive oil
2tbsp lemon juice
1 garlic clove, crushed
4 thick slices of sourdough or rustic style bread
1 large courgette, sliced diagonally
200g roasted peppers from a jar, drained or cherry tomatoes (optional)
a few shaves of parmesan cheese
freshly ground black pepper
basil or parsley sprigs, to garnish


I made some beautifully crusty seeded bread in the bread machine which was the perfect base for the bruschetta. Cut off thick slices then cut them in half.


Mix together the black treacle, crushed garlic, olive oil and lemon juice (or I used lemon-infused olive oil) and brush over the slices of bread. Pop under the grill for a couple of minutes on each side.


Cut the courgette into slices and brush with the marinade.


Char-grill or grill them for about 2 minutes per side until cooked. (I used the Optigrill for about 5 minutes and pressed it shut to give them black stripes.)


Top the bread with the roasted peppers, if using, and the courgette slices. I added cherry tomato slices instead.


Finish off with some parmesan, black pepper and fresh basil or parsley, then drizzle over any remaining marinade.

I have to admit, I wasn't sure what we'd think of courgettes on toast, but it was actually very nice and summery and definitely a lighter option than our usual cheese on toast. The black treacle gave it a lovely sticky sweetness so I'll be trying out a black treacle marinade on meat and fish next.

  2. Your homemade bread looks delicious. I would have never thought of mixing treacle and courgettes as a topping, but why not, sounds like an interesting combination of flavours

    1. I haven't made homemade bread for ages because the kids prefer soft sliced bread but this definitely called for a crusty loaf :) I was slightly concerned about the taste of black treacle being overpowering but it worked very well.
