Madhouse recipe : Mashed Potato Bake


This is a bit like a cross between pasta bake and twice-baked potatoes and is a great way for using up leftover mashed potatoes, as well as any odds and ends in the fridge !

 Mashed Potato Bake


ingredients :

2 onions
300g bacon pieces
2 leeks
4 mushrooms
leftover mashed potato
seasoning (I used salt, black pepper, garlic granules, black onion seeds, ...)
crispy grilled onions
grated cheese
tomato wedges


Fry up the bacon and onions.


Add the mushrooms and leeks.


Heat up and season the mash with whatever herbs and spices you want. Feel free to add butter and milk for a creamier texture.


Add in the bacon/leek/mushroom/onion mixture and stir to combine.


Pour into an ovenproof dish and top with crispy fried onions.


Sprinkle with grated cheese.


Lay tomato wedges on top and bake at 180° for half an hour until the cheese has melted and the tomatoes have cooked. 


I served it with leftover grilled meat and sausages from the barbecue.

  3. I love mashed potatoes, but we rarely have any leftovers. A pie sounds like a totally legit idea to cook loads of mashed potatoes.
