Globecooking recipe : Kladdkaka chocolate cake (Sweden)


It was Pierre's birthday last week and I wasn't going to get away with not making him a birthday cake, even if we had had one at the restaurant we went to for his birthday. The fact that we were all melting in a heatwave (we saw 36.6° on our weather station - crazy heat !) was of no importance whatsoever in his 7-year-old's brain, but I had no desire to spend hours in the kitchen with a hot oven blasting out even more heat.

Luckily, I'd seen a recipe go by on the Not Quite Nigella blog for Kladdkaka, a Swedish chocolate cake that sounded absolutely perfect. It's a simple throw-it-all-in-the-bowl-and-mix recipe, it only needs 15 minutes in the oven and it finishes off in the fridge. It sounded like heaven on such a hot day and it tasted fantastic too. Go and check out her version because she covered it in chocolate leaves that look great fun to make - I went for a pouch of ready-to-use icing because it was far too hot to get creative !

Kladdkaka


ingredients :

1.5 cups plain flour
50g cocoa powder
1.5 cups soft brown sugar
3 teaspoons baking powder
170g butter or coconut oil, melted
3 eggs


Mix the flour, cocoa powder, sugar and baking powder in a bowl.


It was so hot that the coconut oil was already liquid in the jar !


Mix the eggs into the melted coconut oil.


Pour into the dry ingredients and give it all a good stir.


This smelt so rich and chocolatey that it took a lot of willpower to not just dive in with a spoon already !


Pour into a greased silicon cake mould.


Bake at 180° for 14 minutes. The centre will still be wobbly and undercooked. Leave to cool on the workbench then put in the fridge to chill.


It comes out with the lovely soft, gooey texture of a brownie and has a really rich chocolatey flavour, despite only containing cocoa powder and not real chocolate. I have loads of cocoa powder to use up in my kitchen cupboards so I'll definitely be making this again !


Pierre was very happy with his birthday cake.


Although we did decide that the seven made out of sweets looked more like a number one than a seven !
