Madhouse recipe : Cheesy Tomato, Olive & Mince Rice


This was another pre-holiday open-the-fridge-and-cupboards-and-see-what's-in-there meal that actually worked out better than I expected. It's a great way of using up all the odds and ends when you need to go shopping.

 Cheesy Tomato, Olive & Mince Rice


ingredients :

a drizzle of olive oil
2 onions
1 clove garlic
a pack of beef mince
salt, pepper
a tin of chopped tomatoes
a squeeze of tomato concentrate
a sachet of microwavable rice
a dozen olives (green or black)
some cheddar, chopped into chunks
optional : spices (I used baharat)


Chop the onions and garlic and fry in the olive oil.


Add the mince, chopping it up with a wooden spoon as you mix it in to the onions. Cook until the pink has all turned brown. Season with salt and pepper.


Add the tin of chopped tomatoes and the tomato puree. Zap the microwavable rice for a couple of minutes (I used tomato flavoured rice) then add to the mince mixture and stir to combine.


Chop the olives in half and toss into the pan.


Scatter over the chunks of cheddar.


Put under the grill for a few minutes until the cheese has melted.


I wanted to spice things up a bit so I sprinkled over some baharat (a Middle Eastern spice blend) for the grown-ups.
