Globecooking recipe : Lanttulaatikka, mashed swede Finnish-style


Earlier in the week, I shared my recipe for roast dinner with a Finnish twist - Joulukinkku, which is crumbed roast pork with a cranberry gravy. My Finnish-themed Kitchen Trotter box also had a recipe for a traditional side dish called Lanttulaatikka, which can be made with mashed swede or turnips.

Lanttulaatikka

ingredients :

1kg of Swede
15cl single cream or crème fraîche
2 eggs
1/2tsp ground ginger
a pinch of white pepper
3 pinches of nutmeg
1tsp brown sugar
2 pinches of salt
1 Finnish crispbread, crushed (about 4tbsp)


Peel and chop the swede and cook in boiling water for about 20 minutes until a knife goes through easily when you stab it.



Drain and mash the swede. 


Mix half of the crispbread crumbs with the cream, eggs, ginger, pepper, nutmeg and salt and wait until the liquid is absorbed.


Add this mixture to the mashed swede, along with the brown sugar, and stir to combine. Transfer to an ovenproof dish.


Scatter the remaining crispbread crumbs over the top and put in the oven for 10-15 minutes at 210° (or whatever temperature your roast is cooking at is fine) until it goes slightly brown.


Serve with a slice of crumbed pork, doused in cranberry gravy, along with roast potatoes and carrots. Hearty comfort food at its best, that tastes much better than it looks !

  1. I'm not the biggest fan of swedes or turnips, but I am curious to try this recipe. I imagine it goes well with roast pork.

    1. I think you could make it with any root veg - I might try it with potato, carrot and parsnip mixed together next time :)
