#KitchenClearout recipe : Green Thai Curry Stir-Fry


After all the over-indulgence at Christmas, it's nice to get back to some simple, lighter meals, so I decided to make a stir-fry using chicken and lots of vegetables. After rummaging through the kitchen cupboards, I found a pouch of Amoy Thai Green Curry Sauce. I expected it to be blow-your-head-off hot (which is why it was lurking at the back !) but it was actually very mild and tasty.


I'd also received some pouches of Tilda rice, to highlight their new ‘Genuine Goodness’ packaging, expressing all the goodness of naturally gluten–free, low GI basmati, and I suddenly had the makings of a healthy meal that the whole family would enjoy. A study by Tilda has found that the most popular way for Brits to show they care is by cooking our loved ones their favourite meal and the great thing about the range of flavoured microwavable rice pouches is that you can tailor your meal to suit different tastes. 


Here at The Madhouse, that means plain for the kids and spicier for the grown-ups, so they had Pure Basmati while we had Coconut, Chilli &Lemongrass, which perfectly complemented the Thai flavours of the chicken.

Green Thai Curry Stir-Fry

ingredients :

drizzle of olive oil
5 chicken breasts
2 onions
1 clove of garlic
1 large carrot
1 courgette
a pack of baby corn
salt, garlic pepper
pouch of Green Thai Curry sauce (or use coconut milk and green curry paste)


Use a potato peeler to cut the carrot and courgette into ribbons.


Cut the baby corn into halves.


Heat the oil in a large wok and gently fry the onions and garlic. Chop the chicken into chunks and add to the wok, stirring constantly.



When the chicken is just cooked through, add the vegetables and stir-fry for a further 3 minutes. Season with salt and garlic pepper.


This is where I stopped for the kids, heating up a pouch of basmati rice to go with it.


For the grown-ups, I added the pouch of Thai green curry sauce and served it with the coconut, chilli & lemongrass rice.

Both dishes were gobbled up with clean plates all round !

  1. This looks gorgeous! I love Tilda, their rice sachets are a really quick convenient thing to pick up for something a bit different.
