#KitchenClearout recipe : Sweet Potato, Pork & Chorizo One Pot Wonder


As you can probably tell from the name of this dish, it was a case of opening the fridge when I got back from Norway and throwing together pretty much whatever was in there ! Surprisingly, it actually turned out very nice though !

Sweet Potato, Pork & Chorizo One Pot Wonder

ingredients :

a drizzle of olive oil
1 onion
3 mushrooms
some leftover roast pork
some leftover roast potatoes
the last bit of chorizo
1 pack frozen sweet potato fries
a squeeze of BBQ sauce
1/2 pouch of microwavable rice


Heat the oil (I actually used a spoonful of bé rouj that was in the fridge to use it up - it's made from lard and spices) and gently fry the onions and mushrooms.


Chop up the leftover cooked pork (chicken or beef would work just as well) and potatoes and add them to the pot.


I used up the last bit of chorizo too for extra flavour and a bit of a kick.


I cooked the sweet potato fries in the oven before adding them to the pot but they could probably go straight in from frozen, or you could use fresh of course. 


Add a squeeze of BBQ sauce and add the rice. Heat through, stirring, until it's warm all the way through.
