Madhouse recipe : Peanut Butter Brownies


I'm not sure if these should be called brownies or blondies because they're lighter in colour than regular brownies, as they use a mixture of chocolate and peanut butter. 


I used up the tin of African peanut butter that I used in a Cameroonian dish, Chicken Mafe, last week, which was oilier than regular peanut butter in jars, so you may need to add a bit more butter to get the right consistency.

 Peanut Butter Brownies

ingredients :

1 bar (100g) chocolate
1/2 cup (100g) peanut butter
1/4 cup (50g) butter
4 eggs
1 cup (200g) sugar
1tbsp golden syrup
1 cup (150g) flour
1tsp baking powder


Melt the chocolate and butter together in the microwave. Use short bursts and stir frequently to prevent burning.


Stir in the peanut butter.


Then whisk in the sugar and eggs.


Finally mix in the flour and baking powder.


Pour the batter into a greased springform tin.


Bake at 180° for about half an hour until the tip of a sharp knife comes out pretty much clean.


Leave to cool then cut into squares. The inner ones will be gooey and the outer ones will have crispy edges.
