What's Cooking at The Madhouse? menu plan 14/4

Into the second week of the holidays. This week I'll be working through bookmarked recipes and using up lots of odds and ends that are taking up space in the cupboards and freezer. I started my traditional #KitchenClearout last week and managed to create some lovely dishes so I'm hoping to do the same again !

Saturday

lunch - it's that time of week again ... McDonald's !

dinner - I have two boxes of split peas in the cupboard so I'll use one up by making split pea and bacon soup ... or maybe I'll go for Newfoundland Pea Soup with Doughboys (dumplings). I'll just have to make sure it doesn't spill over on to the hob this time !

Sunday

lunch - roast dinner or BBQ depending on the weather

dinner - leftover soup, if there is any, or cheese on toast

Monday

lunch - leftovers from yesterday's lunch : chicken pie if it was a roast dinner, leftover sausages/chops/chicken drumsticks if it was BBQ, either way with peas and mash !

dinner - I have several packs of miso paste and I don't fancy miso soup - I think I'll try miso-glazed salmon with Chinese veg

Tuesday

lunch - smoked sausages with red & green peppers, onions, a tin of tomatoes and chick peas served with frik couscous

dinner -  pork chops with a cranberry BBQ sauce (from a bottle in the cupboard) & mash

Wednesday

lunch - mac & cheese with breaded chicken

dinner - Jerk chicken with mango salsa & rice

Thursday

lunch - sticky apples, sausages and bacon, with wedges/sweet potato croquettes (I have both in the freezer)

dinner - cheesy leeks wrapped in bacon or ham, with rice or just on their own

Friday

lunch - I'm thinking there will be leftovers to use up - if not, spaghetti carbonara

dinner - I found a pack of venison haggis in the freezer from a win last year - I didn't fancy the recipe for Venison Haggis & Fig Tatin that was suggested on the Macsween website so I went googling and found Chicken Balmoral - chicken breast stuffed with haggis and wrapped in pancetta. I think I'll try that, with root veg mash.

  1. hehehe. We had McDonalds for lunch today.
This time last week I was thinking about a BBQ for this weekend. I'm glad I didn't plan it. It's freezing here.
    The Jerk chicken sounds delicious!

    1. If you do try the dumplings in soup, click through to my recipe as a cautionary tale so you don't spend an hour cleaning the hob !! lol
