I wasn't sure whether to call this a burrito, a fajita or a taco, but whatever its name, it was very tasty, very healthy and a great way of clearing out the kitchen cupboards and fridge !
After making barbacoa beef the day before, I wanted to use up the leftover cooked beef. When googling for barbacoa recipes, I had seen many mentions of serving the meat in flour wraps, so I knew this was going to be my plan for using up the leftovers.
However, I had also bookmarked a recipe ages ago for sweet potato and black bean tacos, both things that I had in the kitchen and that needed using up. Further rummaging in the cupboards produced this half used sachet of Tex-Mex seasoning - I'm not even sure what it was exactly as I'd ripped off the top of the pack but I'm pretty sure it was either fajita or taco (and, to be honest, I'm not even sure there's that much difference between them !). OK, this was starting to turn in to a seriously efficient #KitchenClearout recipe !
Sweet potato, black bean and barbacoa beef burritos
ingredients :
1 sweet potato
tin of black beans
tin of chopped tomatoes
Tex-Mex seasoning (chilli, cumin, coriander, ...)
leftover cooked barbacoa beef
flour tortillas

For speed, I chopped the unpeeled sweet potato into quarters and popped it in the oven for half an hour.
This created beautifully soft, vibrant orange sweet potato that could be scooped out of the skin with a spoon.
Put in a pan on a low heat with the black beans (or red kidney beans would be just as good) and a tin of chopped tomatoes. Just look at those colours ! Add the spices and give it all a mix.
Heat up the beef and the tortillas. Lay a tortilla on a plate and add some of the filling.
Top with some of the beef and, if you like, extra toppings like cheese, onion, tomato and coriander. I had mine "nude" and it was still delicious though.
Wrap, devour and, if you're feeling particularly hungry, repeat !
Adding to this month's #KitchenClearout recipe because everything, from the flour tortillas in the freezer to the filling ingredients, were all things that were taking up space in the kitchen !
Sweet potatoes, beans and beef make a very tasty combination. I don't know if it's a burrito or taco either.
