Madhouse recipe : Fish Finger Pie

Despite what you might think at first glance, this isn't a Shepherd's Pie or a Cottage Pie - it's a Fish Finger Pie ! I was intrigued when I came across the recipe on the Young's website and it actually works quite well. The red peppers add some nice sweetness while the beans make it appealing to kids. If I made it again, I'd be tempted to add extra ingredients - mushrooms, onions, maybe some herbs and spices - to jazz things up. It was a great way of using up some leftover mashed potato though.

Fish Finger Pie

ingredients :

1 pack of fish fingers
1 red pepper
drizzle of olive oil
1 can of baked beans
mashed potatoes (add butter, milk, salt, pepper)
handful of grated cheese
1 tbsp olive oil

Start off by putting the fish fingers in an oven proof dish in the oven for 20 minutes or so (check the cooking instructions on pack, or, if you prefer, fry them in a frying pan). Also, put some potatoes on to boil, if making the mash from scratch. Meanwhile chop and fry the red pepper in a little olive oil.

When it's gone soft, add a can of baked beans and stir to combine. Turn off the heat.

Once they are cooked, chop the fish fingers into thirds, then pour over the beans and red peppers.

Drain and mash the potatoes, adding butter, milk, salt and pepper. Spread over the fish finger mixture and sprinkle over the cheese.

Bake at 220° for half an hour or so, until everything is nice and hot and the top of the potatoes/cheese is golden brown.

Adding to the #KitchenClearout linky as it used up some leftover mashed potato.

  1. I made this a few years ago and I don't know why I haven't made it again as we all loved it. It's such a fun meal to have x

    1. It's great to find a recipe that uses nothing but store cupboard basics. I'd never have thought of putting those ingredients together but it does work really well. Definitely one we'll make again :)
