Madhouse recipe : Partridge with Apple & Bacon


I've seen quite a lot of people on my facebook and blog feed lately saying that they got most of their shopping delivered, but all chicken was out of stock. How are you getting on? Hopefully, you're managing to get by. This week, I've been digging through the freezer box of the fridge to see what was lurking in there, and I came across a pack of Partridge Fillets from Wild & Game.



Now, I'll be honest, I really wasn't sure what we'd think of partridge, especially the kids, so I started off by lying and telling them it was chicken, then just owned up after it had all been eaten ! It actually tastes very similar to chicken, with a mild flavour. I used a recipe for Partridge with Apple & Cider Sauce from the Wild & Game website, but as we had no cider, I used apple juice instead, then thickened it up with gravy granules. Delicious ! 

 Partridge with Apple & Bacon

serves 3

ingredients :

1 pack of 6 partridge fillets
drizzle of olive oil
2 apples, peeled, cored and sliced
1 pack of bacon lardons (or bacon, chopped)
1 glass of apple juice (or cider)
chicken stock cube/gravy granules


Start off by heating up the oil in a pan, then gently frying the partridge fillets. They only need a couple of minutes on each side, then remove them to a plate. You can throw the apple wedges in with the meat, then keep cooking until the slices have taken on some colour and started going soft.

 

 Add the bacon pieces after a few minutes and cook, stirring frequently, until they are nicely cooked and starting to go crispy. Add a generous glug of apple juice (about a glass full) then mix in a stock cube or gravy granules, stirring constantly until the sauce has thickened up and has no lumps in it. Put the partridge back in the pan to warm back up.


Serve with mash and salad or whatever vegetables you may have, such as green beans, peas, carrots, sweetcorn ...

  1. I love partridge, I'd say it tastes rather like guinea fowl, more flavour than chicken but not at all gamey. I do find partridge breasts tend to go dry so your addition of bacon and apples is perfect for adding the fat and moisture they need to keep them succulent.

    1. Yes, it worked great - and I'll be honest ... I purposely chose a recipe that would hide the flavour a bit, in case the kids didn't like it !
