Nothing beats the flavours of the American Deep South and nowhere epitomises those tantalising tastes better than New Orleans - think jambalaya, gumbo, chicken wings, catfish, oyster po' boys, burgers and barbecues. The flavours are bold, rich and, most importantly, delicious so I was excited to learn that Tabasco, the iconic kitchen staple for over 140 years, has created four vibrant new recipes that capture the essence of the Deep South, bringing those true American flavours to the UK. Even before I started trying them out, I oohed and aahed at the pretty, retro-style labels and the exciting flavour combinations.
There are four flavours in the new range :
The surprising Sweet Chipotle and Cola is the ultimate sweet and smoky sauce for traditional American burgers, hotdogs or grilled meat. It would make a fantastic sticky glaze for ribs on the barbecue in the summer months too. It may only have a one chilli heat rating but it's still got a bit of a kick !
Chipotle and Smokey Bourbon sauce is inspired by the jazz clubs and bar scene of New Orleans. The subtlety of smoked chipotle peppers blends perfectly with the Bourbon to create the ultimate sauce for authentic American ribs and pulled pork - sweet and finger licking sticky. This is another fairly tame one.
The Peppery Deep South Creole sauce transforms chicken wings and veggie burgers. Rich tomatoes and bell peppers are brought to life with a vibrant blend of herbs and spices to reflect the diversity of flavour in Louisiana. The heat has been cranked up a notch to two chillis, giving it a medium rating - go easy on it !
Fruity and Fiery Habanero is an exotic infusion of hot Habanero peppers, sweet mango, banana and papaya. It delivers a blast of hot chilli that’s great for dipping or marinating and brings Deep South sunshine to seafood or veggie skewers. It's a lovely sweet, fruity flavour but the fiery three-chilli rating warns that this is not for the faint-hearted (or taste-budded !).
These bottles are all great multi-taskers, lovely as table sauces or dips, added to casseroles, soups and stews for extra richness and flavour, but also as marinades. They'll come into their own during BBQ season but I've been using them in the oven too, where they impart a lovely smokiness to food that you usually only manage to get on a charcoal grill.
As you can see, they make a fabulously rich, sticky glaze that takes grilled chicken to a new level.
Even if you think you don't like tabasco, look out for the milder sauces because they only have a slight kick and they are perfect for jazzing up your meal-times.
